Rubs are spice and seasoning mixtures that you sprinkle over meats to flavor them before cooking. After marinating a short time, they give food intense flavors. And as the meat cooks, the rub seals in the juices of the meat and the nutrients it contains. Ingredients One 2 l/2-to 3-pound chicken, preferably organic, quartered 1/2 cup chili powder rub Chili powder rub 1/4 cup chili powder 1 tbls. cumin 1 tbls, garlic powder 2 tsp. oregano 2 tsp. ground ginger 1 tsp. salt Mild Spicy White pepper, black pepper, mulato chilies, dry mustard, and jalapeno peppers seeded and chopped Hot and Spicy Cayenne, ancho chilies, pasilla chilies, negro chilies, and chipotle chilies Chili Powder Rub Start with the base and add your own special spices in varied amounts. 1. Wash chicken quarters in cold water. Put into an enamel or stainless-steel baking pan. Sprinkle rub on both sides of chicken, using all of the rub. 2. Place in refrigerator for 25 to 45 minutes. 3. Using a butter knife, scrape off excess rub. 4. Bake or broil until chicken is tender when a fork is inserted and no pink juices come out. Cook about 30 minutes, baked, or 20 minutes broiled.
