Mushroom Soup
3 Tbsp. olive oil
1 bunch green onions, separating green tops from white bottoms, chop white bottoms, slice green tops thinly and keep separate
2 stalks celery
1 pound fresh mushrooms, sliced
5 cups water
1/2 teaspoon sea salt
1/4 tsp. black pepper

Saute white bottoms of onions and celery in oil.  Add mushrooms and saute 1/2 minute.  Add water, salt and pepper and simmer 20 minutes. Serve garnished with green tops of onions.
