Salmon Croquettes

1 can salmon
1 cup mashed potatoes(can use leftovers)
1 clove garlic, minced
1 onion chopped very fine
1 egg
1 tsp. parsley
1 lemon
Drain salmon, saving water to use in other recipes.  Remove skin and bones. Mix salmon in bowl with mashed potatoes, garlic, onion, egg and parsley. If too dry use a little of water from can. Let stand covered 20 minutes.  Oil baking sheet,  form into egg shapes and place on baking sheet. Bake at 350 degrees until browned. Squeeze lemon juice on each croquette. Serve
